Fast and easy: Thai Chicken and Coco Soup




It appears I'm in a soup period at the moment, so I hope you're ready for one more? This one is a lot healthier than the peanut soup and super fast and easy to make too. Oh, and quite delicious by the way. After a weekend of celebrating my friend's birthday with alcohol and a lot of food (and a hangover pizza yesterday, don't judge!), this light soup was just what I needed today. I was inspired by this lovely recipe but felt like experimenting a bit and making my own version. The measurements are only instructive and not 100 % precise, but don't be afraid to try and taste your way on this one like I did.
 
Thai Chicken and Coco Soup (serves 4 people):
 
500 g cooked chicken breast, thinly sliced (I boiled mine for 10 minutes)
4 dl. low fat chicken stock
3 tablespoons oyster sauce
1 tablespoon chili sauce
4 teaspoons coconut oil
3 dl. mushrooms
2 cans of bamboo shoots
1 green onion, finely chopped
Juice of 1 lime
1 dl. shredded coconut
Ginger, grated
Curry
Chili  
Olive oil
4 tablespoons skyr (i.e. low fat creme fraiche)
 
Heat up some olive oil in a pot and add a hint of chili and curry. Then fry onion and mushrooms for a couple of minutes and add a bit of grated ginger. Add chicken stock, coconut oil, oyster sauce, chili sauce, lime juice, Skyr/creme fraiche, and bamboo shoots (but be careful with the chili sauce, and add a little at a time to taste). Let the soup simmer for 5 minutes, then add the pre-cooked chicken, and voilá! Dinner is served. I sprinkled some shredded coconut on top (and peanuts on the bf's portion), and served the soup with brown rice. I hope you'll enjoy it as much as we did.
 
Dansk: Jeg har lavet thai-inspireret kylling- og kokossuppe til aften, og den kan varmt anbefales. Ikke alene er den supersund og superlækker; den tager tilmed kun omkring 15 minutters tid at lave. Perfekt, ikke? Jeg fandt inspiration i denne opskrift men lavede min egen (lidt sundere) version og erstattede kokosmælken med skyr og en smule kokosolie. Derudover tilsatte jeg revet ingefær, lidt limesaft, et skvæt fiskesauce, lidt chilisauce, champignoner og bambusskud. Jeg håber, I vil nyde den så meget, som vi gjorde herhjemme.

Spicy peanut and chicken soup



 
Normally I'm not too big on spicy food, but after trying this extremely tasty soup I'm suddenly a bit perplexed. I cooked a large batch yesterday based on this lovely recipe from one of my absolute favorite Danish food blogs, The Food Club, and it was a huge hit. Perfect for a cold and windy Sunday night in. I made a few alterations to Ditte's recipe in order to make it a bit less rich (but make no mistake, this is no soup for dieters).
 
Spicy peanut and chicken soup (serves 4-5 people):
 
1 tablespoon olive oil
1 onion, finely chopped
2 cloves of garlic, grated
Approximately 4 cm ginger, grated
1 tablespoon tomato pureé
7 tablespoons peanut butter
2 tablespoons coconut milk
Juice of 1 lime
5 tablespoons curd or low-fat cremefraice
4 medium size carrots, chopped
1/4 cauliflower in florets
7,5 dl chicken stock
Approximately 500 g chicken filet, finely sliced
Fish sauce or oyster sauce
Chili sauce
Peanuts
Salt
Rice
 
Heat up the oil in a large pot and fry onion, garlic, and ginger lightly for a couple of minutes. Then add the tomato pureé and fry for another couple of minutes. Add peanut butter, curd (or cremefraiche), coconut milk, and bouillon, and let it simmer for 20-25 minutes. Stir occasionaly to make sure the peanut butter dissolves. After 20-25 minutes, add carrots and cauliflower florets, and taste with fish sauce, lime juice, chili sauce, and salt. Let it simmer for 10 minutes, then add chicken, let it simmer for another 15 minutes, and add peanuts before serving. I served my soup with brown rice, slices of fresh lime and more peanuts. Enjoy!

Asos Marketplace is definitely at the top of my list. With both private sellers and boutiques, the selection
is huge, and there's something for every taste. I don't think I've ever managed to visit this place without buying at least one item.

I fell in love with Episode when I lived in Amsterdam and a stop by their physical store in Runstraat became a weekly habit. They also have physical stores in Copenhagen, Paris, Brussels, London, and Utrecht, but if you're not planning to visit any of these places any time soon, you can shop online right here. By the way, how pretty are those Dr. Martens?!

I absolutely love Urban Outfitters, particularly their selection of re-worked vintage pieces. Unfortunately, Copenhagen and the closest UO-store are about four hours away, so I'm a frequent visitor at the web shop

I'm mainly a high street/vintage kind of person, and I rarely buy really expensive clothes (wouldn't mind owning that Jean Paul Gaultier sweater though). But I've always been fascinated by high fashion and every now and then I like to take a peek at Farfetch.com and their collection of high fashion vintage items, if not to buy then for a dose of nostalgia and some dreaming.

I am so in love with that swimsuit! Adored Vintage is such a pretty web shop with equally pretty vintage clothes and accessories. The style is more elegant and feminine and I am particularly fond of their selection of cute and glamorous dresses.
